Ingredients

  • 1-1/2 lbs boneless, skinless chicken thighs
  • 3-4 garlic cloves, minced
  • 28 oz diced tomatoes
  • 6 oz tomato paste
  • 1/2 red bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1 small onion, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 1/4 cup water
  • 1 package of your favorite pasta, prepared as directed on box

Preparation

Step 1

Season the chicken with salt and pepper. Add the rest of ingredients EXCEPT for the pasta. Stir well to combine.

Cover and cook on low for 7 hours or on high for 4 hours.

Serve with your favorite pasta.
