Ingredients
- 12 oz pork tenderloin, trimmed and cut into 2" x 1/4" strips
- 3 tsp reduced-sodium soy sauce, divided
- 1 tbsp cornstarch
- 1 tbsp peanut oil, divided
- 1 green bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 sweet onion, sliced
- 1 tbsp freshly grated ginger
- 1 cup baby corn
- 1/2 cup dry-roasted unsalted peanuts

Step 1
1.) Toss the pork with 1 tbsp of the soy sauce and the corn starch.
2.) Heat 2 tsp of the oil in a large nonstick skillet or wok over med-high heat. Add the pork and cook for 3 to 4 minutes or until cooked through. Transfer to a plate and reserve. return the skillet to the heat and add the remaining 1 tsp oil.
3.) Add the pepper, carrot, onion, ginger, and corn. Cook, stirring often, for 3 to 4 minutes or until crisp-tender. Add the reserved pork, peanuts, and remaining soy sauce. Cook, stirring, for about 1 minute longer or until the pork is cooked through. Serve immediately.
