Okinawan Shoyu Pork

Ingredients
- 3 to 4 pound boneless pork butt
- 1/2 cup Sake
- 2 thumb-size pieces ginger
- 1 cup shoyu (soy sauce)
- 1 cup granulated sugar
- 1 tablespoon mirin
- Chopped green onions

Preparation
Step 1
Soak meat in Sake in sealable plastic bag for at least one hour or overnight. Drain.
Boil pork in water and ginger for 2 hours (or 25 to 30 minutes in a pressure cooker). Drain and cool meat. Slice; put in baking pan.
Bring the shoyu, sugar and mirin to a boil in a small saucepan. Sprinkle green onions over the pork, then pour in the sauce. Bake in a preheated 350° F oven for 45 minutes.
