Oatmeal Raisin Cookies (Quaker Oats)

Ingredients

  • 1/2 cup (1 stick) plus 6 T. butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 t. vanilla
  • 1 1/2 cups all-purpose flour
  • 1 t. baking soda
  • 1 t. ground cinnamon
  • 1 t. baking soda
  • 3 c. Quaker Oats, quick or old-fashioned
  • 1 cup raisins

Preparation

Step 1

1. Heat oven to 350.
2. In a large bowl, beat butter and sugars at medium speed of electric mixer, until creamy.
3. Add eggs and vanilla. Beat well.
4. Add combined flour, baking soda, cinnamon and salt. Mix well.
5. Add oats and raisins. Mix well.
5. Drop by rounded teaspoonfuls onto ungreased cookie sheet.
6. Bake 8-10 minutes, or until light golden brown.
7. Cool 1 minute and then place cookies on wire rack to cool completely.

To make bars, press dough into bottom of an ungreased 9x13 pan. Bake 30-35 minutes or until light golden brown. Cool completely on wire rack. Cut into bars.
