Healthy Caesar Ranch Pasta Salad

Ingredients

  • 8 oz. whole-wheat pasta
  • 1/2 cup light Caesar dressing , divided
  • 1/2 cup light ranch dressing , divided
  • 1 (12 oz.) package frozen peas and carrots, defrosted
  • 1 medium red pepper, chopped
  • 1/2 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper

Preparation

Step 1

Cook pasta according to manufactures instructions. Drain and allow to cool.

In a large bowl, 7 tbsp. of Caesar dressing and 7 tbsp. ranch dressing.

Stir in peas, carrots and red pepper.

Add pasta and toss to combine.

Add salt and pepper

Refrigerate for an hour. Stir in remaining tablespoon of both dressings before serving.
