Sausage Soup with Wild Rice

Ingredients

  • 1-1/2 c. water
  • 1/2 c. uncooked wild rice
  • 1 lb. Italian turkey sausage
  • 1 tsp. olive oil
  • 1 c. chopped onion
  • 3 garlic cloves, crushed
  • 3 c. water
  • 3 tbsp. tomato paste
  • 1 tsp. oregano
  • 1 tsp. basil
  • 3 (16 oz.)cans chicken broth
  • 1 (14 oz.)can diced tomatoes
  • 3 cups torn spinach
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 tbsp. parmesan cheese

Preparation

Step 1

1. Boil 1-1/2 c. water. Add rice; cover, reduce heat & simmer 1 hour. Set aside.
2. Cook sausage in a Dutch oven over med-high heat until browned; stir to crumble. Drain & set aside.
3. Heat oil in Dutch oven over med-high heat. Add onion & sauté for 3 minutes. Add garlic & sauté for 1 minute. Add sausage, 3 c. water and the next 5 ingredients (water - tomatoes); bring to a boil. Reduce heat; simmer for 20 minutes.
4. Stir in cooked rice, spinach, salt & pepper.
5. This soup freezes well. Serving size: 1-1/3 c. soup & tsp. cheese.
