Balsamic Roasted Brussel Sprouts

  • 1 1/2 lbs brussel sprouts, trimmed & cut in half
  • 4 oz pancetta, sliced 1/4" thick
  • 1/4 C olive oil
  • Kosher salt & pepper
  • 1 T balsamic vinegar

Step 1

Preheat oven 400.

Place brussels sprouts on sheet pan

Cut pancetta into 1/2" dice & add to baking sheet. Add olive oil, salt & pepper, toss.

Roast 20-30 min until tender & nicely browned & pancetta is cooked. Toss once during roasting.

Remove from oven; drizzle immediately with balsamic vinegar. Adjust seasonings to taste & serve.
