Ingredients
- 700 g/1 lb 8 oz lean lamb fillet, cut into bite-sized pieces
- 2 red onions, peeled and cut into wedges
- 200 g/7 oz new potatoes, scrubbed
- 2 courgettes, thickly sliced
- 4 flat mushrooms, thickly sliced
- 2 tsp dried oregano
- 400 g can chopped tomatoes with herbs
- Handful fresh mint,chopped

Preparation
Step 1
1. Preheat oven to 200 degrees C. Place all ingredients except mint into an ovenrpoof casserole dish and stir to combine. Add 250 ml water, cover tightly and place in the oven.
2. Immediately reduce the oven temperature to 160 degrees C and cook for 1 hour. Check halfway through--if there is a lot of liquid left cook uncovered for remaining time.
3. Remove from the oven and garnish with the mint.
