Saluted Crawfish

  • 1 Lb crawfish tails
  • 1/2 tsp white pepper
  • 1/2 tap salt
  • 1/4 tsp cayenne pepper
  • 1/2 tsp sweet basil leaves
  • 1/4 tsp dry mustard
  • 1/2 lb -- 2 sticks-- butter
  • 1/2 cup (+) green onion tops
  • 1 tbsp chopped garlic
  • 1/2 cup seafood stock ( -tbsp lobster stock + 1/2 cup chicken broth)
  • Cooked rice



Step 1

Combine seasoning ingredients in bowl and set aside
Place 1 stick butter, onions, and garlic in a large deep skillet
Sauté one minute and turn off heat
Add crawfish and seasoning mix, turn heat to high and sauté 3 minutes, stirring often
Add remaining butter in pieces, slowly add stock, move the pan back and forth for six minutes, shaking continuously .
Serve over rice
