Orzo Walnut Pilaf

Ingredients

  • 1 1/2 cups walnuts
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 3 cups orzo
  • 7 cups hot chicken or vegetable stock
  • 1 1/2 teaspoons dried oregano
  • pinch salt and pepper
  • 1/2 cup chopped fresh parsley

Step 1

Toast walnuts in single layer on rimmed baking sheet in 350 oven for 4 to 5 minutes or until fragrant. Let cool.

In large saucepan, heat oil over medium heat, cook onions, stirring often, for 5 minutes or until softened. Reduce heat and add garlic and orzo, stirring to coat. Pour in stock. Cover, reduce heat and cook until done. Stir in seasonings and walnuts.
