Cheese Ravioli with Toasted Walnuts

Ingredients

  • 1 14-16 oz. package cheese ravioli
  • 1/3 C olive oil
  • 1 clove garlic, sliced
  • 1 C walnuts, roughly chopped
  • 2 t lemon juice
  • salt and pepper
  • 1/2 C fresh flat-leaf parsley
  • 1/4 C grated Parmesan

Preparation

Step 1

Cook the ravioli according to the directions. Drain, reserving 3 T of the cooking water.

Heat the oil in a medium skillet. Add garlic and walnuts. Cook, stirring until the nuts are lightly toasted and fragrant. About 5 minutes.

Stir in the lemon juice, 1/2 t salt, 1/4 t pepper, parsley and reserved cooking water.

Add the ravioli to coat.
