Ingredients

  • 4 cans of chickpeas drained
  • 3 TBSP grated fresh ginger
  • 1 cup diced fresh tomatoes (1 large tomato)
  • 1 tsp powdered black salt
  • 1 1/2 tsp roasted cumin powder
  • 1/4 tsp black or white pepper
  • 2 Tbsp lime (or lemon) juice
  • salt to taste
  • EVOO
  • Chopped onions (red or yellow)
  • chopped green chilis
  • chopped cilantro
  • edamame
  • avocado

Preparation

Step 1

mix all the ingredients in a large bowl. use your imagination, add color to it. to make ahead, add salt at the very end before serving.

peel ginger with the a spoon, grate using a the large size grater.

Buy powdered black salt and roasted cumin from Indian specialty store.
