- 4 cans of chickpeas drained

- 1 cup diced fresh tomatoes (1 large tomato)
- 1 tsp powdered black salt
- 1 1/2 tsp roasted cumin powder
- 1/4 tsp black or white pepper
- 2 Tbsp lime (or lemon) juice
- salt to taste
- EVOO
- Chopped onions (red or yellow)
- chopped green chilis
- chopped cilantro
- edamame
- avocado

Preparation
Step 1
mix all the ingredients in a large bowl. use your imagination, add color to it. to make ahead, add salt at the very end before serving.
peel ginger with the a spoon, grate using a the large size grater.
Buy powdered black salt and roasted cumin from Indian specialty store.
