Vegetable Beef Stew in Red Wine

Ingredients

  • 1 kg chuck steak
  • flour
  • 2 T oil
  • 375 g baby onions
  • 1 1/2 C dry red wine
  • 1/2 C beef stock
  • 4 medium carrots, chopped
  • 4 sticks celery, chopped
  • 500 g packet frozen peas
  • 1 T chopped fresh parsley

Step 1

Cut steak into 1" cubes. Toss steak in flour, shake away excess flrou. Heat oil iin pan, cook steak in batches until well browned, drain on paper towels. Add onions to pan, cook stirring until lightly browed; add wine and stock; cook stirring 1 minute. Return steak to pan, simmer, covered, 1 hour, stirring occasionally.

Add carrots and celery; cover, cook another 20 minutes. Add peas, cook until steak is tender. Serve sprinkled with parsley.
