Ingredients
- The Rub:
- 2 tbsp. light brown sugar
- 1 tbsp. chili powder
- 1 tsp ground cumin
- 1/8 tsp kosher salt
- 1/8 tsp black pepper
- The Fish:
- 6 salmon fillets (6oz each, skin on)
- 2 cedar planks (7"x 12") soaked in water for a 1 hour

Step 1
in a bowl, combine all the rub ingredients. sprinkle over the fillets. arrange the fillets on the soaked cedar planks, leaving about an inch between pieces of fish.
place the planks over the cooler center of the grill, with the thickest sections of fish closes to the coals. cover and cook for 30 to 35 mins, until the thickest part of each fillet registers about 135F on an instant read thermometer. remove from the grill and let the fish ret on the planks for 5 to 10 mins before brushing with sauce.
