Rocking Peanut Noodles

This is a great potluck "pleaser." Whenever I share this dish with others, I am asked for the recipe. My recipe card for this is very, very well used.
I don't recall where I found it, possibly Gourmet Magazine back in 2002 or 2003.

Ingredients
- 8 oc. spaghetti or other noodles
- 1 bunch of green onions, sliced
- 2 Tablespoons sesame oil
- 1 tsp. minced fresh ginger
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 Tablespoons cider vinegar
- 1 teaspoon white sugar
- 1/4 teaspoon crushed red pepper flakes

Preparation
Step 1
Cook pasta and drain.
Saute the scallions in the oil over low heat until tender.
Add the ginger; cook for 1-2 minutes.
Mix in the peanut butter, soy sauce, hot water, vinegar, sugar, red pepper.
Remove from heat.
Toss the noodles with sauce.
Serve.
