Was looking for a quick side dish and this is a winner. Great and refreshing yet complex. A definite winner!

Ingredients
- 8 ounces pasta (any shape works)
- 5 ounces basil pesto
- 6 ounces Feta, crumbled (seasoned if possible)
- 2/3 cup Kalamata Olives, pitted & sliced
- 1 shallot, diced
- Juice of 1/2 lemon
- Salt
- Pepper

Preparation
Step 1
Cook the Pasta according to it's directions.
Drain the Pasta, but while it's still warm stir in the Pesto.
Add Olives, Feta, Shallots and Lemon juice to the past and stir to combine.
Taste and add more Salt, Pepper or Lemon Juice as you see fit
Cover and refrigerate. It actually gets better after it's cooled a bit.
