HOMEMADE PASTA

I always thought that making homemade pasta required some kind of magic. In reality, it is very simple - only two ingredients! No need for oil, salt or anything magical - just flour and eggs. One of the first times I really realized how wonderful lasagna was with homemade pasta happened to be on a Costa cruise. We took Anthony and Matt (aka Fred) for spring break to the Caribbean. The lasagna melted in your mouth. When Peter and I went to Italy, we realized that all the pastas were homemade and they were heavenly. Thus began the quest to be able to make pasta like this at home. This recipe is from Sardi’s and was taken from the Vincent Price cookbook. It can be doubled or tripled.

- In mixing bowl, beat 3 eggs. Gradually beat in 1-1/2 cups flour

Step 1
In mixing bowl, beat 3 eggs. Gradually beat in 1-1/2 cups flour, ½ cup at a time to make a sticky paste. Turn paste out onto a pastry board sprinkled with ½ cup flour and knead in just enough of this additional four as necessary to prevent sticking. Divide dough in half, cover with a towel and let rest for 30 minutes.
Roll out dough on pastry sheet until as thin as possible. Cut into desired shapes and boil in salted water with a few drops of olive oil added, until done.
