Sweatin' Turkey Vegetable Chili

A nice Low Carb Chili with a kick. Try different onions. I like the sweet with this spicy chili. I also like the fattier turkey. I have added chipotle peppers in adobe sauce and have changed the name of the dish. I'm betting it works well with hamburger also. This is now my go to chili.

Ingredients

  • 1 cup Green Pepper chopped
  • 3/4 cup Celery chopped
  • 1/2 cup Carrot chopped
  • 1/2 cup Onion chopped
  • 2 t Chili powder to taste
  • 2 Chipotles Pepper in Adobe sauce
  • 1 lb Ground Turkey
  • 1 T Italian seasoning
  • 1 1/4 cup of spicy V8
  • 1 ea 8 oz can Tomato sauce (no salt)

Cooking time 45mins

Preparation

Step 1

Add vegetables in large skillet over medium heat and saute until tender. About 8 mins.
Add turkey, chili powder, and Italian seasoning. Break up and cook until turkey is browned.
Add chipotle peppers
Add cocktail juice and tomato sauce. Mix well to boil.
Reduce heat to simmer, stirring occasionally, until thickened. About 30 mins.
Serve.
