Oma's Seafood Bisque

The best seafood bisque I have ever tried! I used fat free Half&Half and low fat cream cheese and added a large dash of Sherry.

Ingredients
- 1 lg onion, shopped
- 2 sticks butter
- 8 oz cream cheese (I use low fat)
- 1 qt half&half (I used fat free)
- 2 cans cream of potato soup
- 1 pkg 16 oz small frozen shrimp or fresh shrimp cut in half
- 1 6oz can crab meat or imitation crab
- 1 8oz package frozen or can corn
- 1/2-1 tsp red pepper flakes
- 1 tsp black or white pepper
- Dash Sherry (optional)

Preparation
Step 1
In a large stockpot, melt butter over med-low heat. Add onion and cook until tender, stirring often. Add the remaining ingredients (except sherry), cutting the cream cheese into cubes. Stir until smooth and shrimp are cooked through, about 15 minutes. Add sherry then taste for seasonings and adjust if necessary. Add milk if it is thicker than you prefer.
