Breaded Salmon Skewers with Grilled Vegetables

Ingredients

  • Salmon:
  • 4 fillets salmon, thinly sliced (no skins)
  • 1 c seasoned corn flakes
  • 4 Tbsp mustard
  • 4 Tbsp honey
  • 1/2 c extra-virgin olive oil
  • 2 Tbsp fresh lemon juice
  • Broiled Salad:
  • 2 large red onions
  • 3 peppers (any colors)
  • 1/4 c olive oil
  • Kosher salt
  • black pepper

Preparation

Step 1

Cut salmon fillets into approximately 1" chunks
Combine mustard, honey, olive oil, and fresh lemon juice into a bowl and mix. Reserve half to use later
Place pieces of salmon into remaining marinade and mix to coat all sides. Cover well. Refrigerate half an hour or overnight.
Preheat oven to 375.
Roll each piece of salmon in corn-flake crumbs and place on cookie sheet lined with parchment paper. Bake 12 minutes. Allow to cool.
Before serving, place 2-3 pieces of salmon onto toothpicks or a wooden skewer.

Broiled salad:
Thinly slice onions and peppers into round slices and place on a pan lined with parchment paper and drizzle with olive oil. Sprinkle salt and pepper and broil 12 minutes or until starts to blacken
To serve: pile onions and peppers into a small pile in the center of the plate and prop skewer against it. Drizzle with mustard dressing. Serve warm or at room temperature. (You can freeze the salmon in advance and bake on the day you serve it)
