  • 2 lbs Cod fillets - rinsed, patted dry
  • 1/4 c Butter - softened
  • 1 T Shallots - minced
  • 1 clove Garlic - finely minced
  • 1/8 t White Pepper
  • 1/2 t Lemon Juice
  • 1 1/2 t Fresh Parsley - finely minced



Step 1

Cut fish into 6 equal portions. In small bowl, cream butter until smooth. Add shallots, garlic, pepper and lemon juice; mix well. Add parsley; blend. Spray broiler pan with non-stick vegetable spray. Place fish on broiler pan; spread with butter mixture. Broil 3-4" from source of heat for 5 minutes. Turn, baste with butter mixture, and cook for additional 3-5 minutes, or until fish flakes easily.
