Deep-Dish Fish Pie

This is a very easy, healthy fish pie. You can use just cod but I like using both cod and salmon.

Ingredients
- 3 large potatoes
- 3 large carrots
- 4 eggs
- 12 oz / 340 g nonfat plain yogurt
- 3 cod fillets, boneless and skinless
- 2 salmon fillets, boneless and skinless
- Small handful of fresh dill (or appx 1 tsp dried dill)
- Small handful of fresh parsley
- 7 oz / 198 g frozen peas

Preparation
Step 1
Preheat oven to 200 degrees C / 400 degrees F. Peel and dice potatoes and carrots and boil until tender. Drain and mash together.
Meanwhile, poach or bake salmon and cod for 6-8 minutes or until just cooked. Cool then flake. Boil the eggs for 10 minutes, cool under cold running water, peel and cut into quarters. Chop the parsley and dill (if using fresh).
Add the eggs, peas, herbs, and yogurt to the fish and gently combine. Place into an ovenproof dish and cover with potato and carrot mash.
Place in oven and bake 20-25 minutes or until top is lightly browned.
