PORK TACOS W/ SALSA ROJA

Ingredients

  • PORK:
  • 3 TBS fresh OJ
  • 2 TBS veg oil
  • 2 TBS lime juice
  • 2 TBS minced garlic
  • 2 TBS fresh chopped oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp each black pepper and red pepper flakes
  • 2-3 lb pork t-loin
  • TORTILLAS
  • 8 6" corn tortillas
  • 1 cup canned refried black beans
  • 1 cup shredded Monterey Jack Cheese
  • GRILLED SALSO ROJAS
  • 1 1/4 labs Roma tomatoes
  • 1/2 small onion
  • 2 cloves garlic, wrapped in foil
  • 1 jalapeño
  • 1/4 cup chopped fresh cilantro
  • 1/4 tap kosher salt

Step 1

1. PORK: whisk together all ingredients except pork. Place pork in baking dish, pour marinade over meat. Cover dish and chill t-loin until ready to grill or up to 2 hours
2. Preheat grill to medium high. Grill pork, turning often until meat reaches 145 degrees, about 15-20". Remove meat from grill, tent w/ foil and let rest.
3. Top each tortilla w/ 2 TBS beans and 2 TBS cheese. Place tortillas over medium-low and grill just until cheese melts, 1-2".
4. Cut t-loin into thin slices. Top each tortilla with sliced pork; serve w/ Grilled Salsa Rojas
5. SALSA: grill medium-high, brush grill grate w/ oil. Grill vegs until soft, about 5", remove from grill and let cool 2-3"
6. Peel tomatoes, garlic and jalapeño. Place peeled vegetables in food processor w/ grilled onion, cilantro, lime juice and salt. PUlse salsa a few times until blended, but still chunky.
