Ingredients
- 1/4 cup barbecue sauce
- 2 teaspoons brown sugar
- 1/2 teaspoon lemon juice
- 1/2 teaspoon vegetable oil
- 1 cup sliced onion
- 1/2 cup green bell pepper strips
- 2 (2-ounce) sandwich rolls
- 3/4 cup (about 4 ounces) thinly sliced Apricot-Glazed Pork Roast (see recipe)

Step 1
Preheat oven to 400º.
Combine first 3 ingredients in a small bowl. Stir well; set aside.
Heat oil in a large nonstick skillet over medium-high heat. Add onion and bell pepper; sauté 6 minutes or until tender.
Spread barbecue sauce over cut sides of rolls. Divide onion mixture and pork evenly between roll bottoms; top with roll tops.
Wrap sandwiches tightly in foil; bake at 400º for 15 minutes.
