Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup minced fresh onion
  • 1 garlic clove minced
  • 2 cups low-salt chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 cup uncooked basmati rice
  • 1/4 cup chopped chives
  • 1/4 cup thinly sliced green onions
  • 1 (8-ounce) package mushrooms chopped

Step 1

Heat oil in a medium saucepan over medium-high heat. Add onion and garlic, and sauté 2 minutes. Add broth, salt, and pepper. Bring to a boil; add rice. Cover, reduce heat, and simmer 35 minutes. Remove from heat; let stand 5 minutes. Stir in chives, green onions, and mushrooms.
