Roasted Leg of Lamb

Ingredients

  • 1 whole bone in leg of lamb (7 lbs)
  • 4 Tbs olive oil
  • 2 Tbs crushed garlic
  • 2 tsp finely chopped fresh rosemary
  • 2 tsp salt
  • 1 tsp pepper

Preparation

Step 1

Trim excess fat from the lamb leg
Mix olive oil with the garlic, salt, and pepper and rub it all over the lamb. Place the lamb, meatier side up, in a roasting pan and roast for about 1 1/2 hours. The internal temperature should be about 145 degrees for medium lamb.
Let lamb rest, out of the oven, for 15 minutes before carving.
