Citrus Chicken Summer Salad

Ingredients
- 2 cups cooked, shredded chicken
- 1- 15 oz. can black beans, drained and rinsed
- 1- 15 oz. can kidney beans, drained and rinsed
- 1- 15 oz. can white corn, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 mango, diced
- 3 cloves garlic,minced
- 2 jalapenos, minced
- 1 orange, juiced
- 2 limes, juiced
- 1/4 cup balsamic vinegar
- 3/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cumin

Preparation
Step 1
In a large bowl, toss the chicken, beans, corn, bell pepper, onion, mango, garlic and jalapenos. For the dressing, whisk the remaining ingredients and pour over the salad. Toss to coat. Refrigerate until ready to serve. Serve cold or at room temperature.
