Mobile Bay Crab Meat Benedict

  • 1/4 cup butter
  • 1 cup white crab meat
  • 1 hard-cooked egg grated
  • 2 tablespoons Sherry
  • 1/2 tablespoon lemon juice
  • 1 dash Tabasco sauce
  • 4 English muffins halved, toasted
  • 1 package Hollandaise Sauce
  • Paprika for garnish
  • Chopped parsley for garnish
  • Chopped green onion for garnish

Step 1

Melt butter in a skillet. Add the crab meat, grated eggs, sherry, lemon juice, Tabasco. Cook until heated through.

Place English muffin half in each serving dish. Cover with crab meat mixture. Top with Hollandaise Sauce. Place under broiler until bubbly.
