Ingredients
- 1 can (14 oz/398 ml) chickpeas, drained and rinsed
- 3/4 tsp. baking powder
- 1/8 tsp. baking soda
- 1/4 tsp. potassium salt (or omit)
- 3/4 cup date sugar
- 1/4 cup pitted Medjool dates, packed
- 2 tbsp. unsweetened, plant-based milk
- 2 tsp. vanilla extract
- 1/4 cup quick oats
- 1/4 cup raw almond butter or peanut butter
- 1/3 cup dark chocolate chips (optional)

Step 1
1. Preheat oven to 350 degrees. Line an 8x8 in pan with parchment paper and set aside.
2. Combine all ingredients (except for chocolate chips, if using) in a food processor or high-powered blender and blend until smooth. Transfer to bowl and stir in chocolate chips, if using.
3. Press dough into prepared pan and bake in oven for 30 minutes (bars will seem slightly undercooked when removing from oven but they will firm up as they cool). Allow bars to cool before slicing and serving. Store in airtight container in refrigerator.
