Tater Tot Sausage Hash

In the event you’re faced with leftover tots, a quick mash up with sausage and peppers turns into a hearty breakfast.
Ingredients
- 2 pound sweet or hot Italian sausage
- 1 tablespoon vegetable oil, if necessary
- 1/2 large onion, chopped
- 1/2 large green bell pepper, chopped
- 1/2 teaspoon paprika
- 1/2 teaspoon kosher salt
- 1/2 pound tater tots, baked
- 2 tablespoons unsalted butter
- 4 large eggs

Step 1
Heat a cast-iron skillet over medium-high heat.
On the hot skillet, add the sausage, breaking it up into pieces until cooked through and crisping, 3 to 4 minutes.
Remove from the pan. If needed, add enough oil to the fat left in the pan to make about 1 tablespoon. Cook the onion and pepper until soft, about 3 minutes.
Stir in the paprika and salt.
Return the sausage to the pan and add the tots. Using a potato masher, mash all together.
Then press the mixture down into the pan and let crisp, 1 to 2 minutes.
Stir and press again to crisp, about 8 more minutes.
A few minutes before the hash is done, heat a large nonstick skillet over medium heat.
Melt the butter and then crack in the eggs and fry until desired doneness.
Divide the hash among 4 plates and top with an egg.
