A precise guide
To determine when the turkey is done, take its temperature in at least two places with an instant-read thermometer. Never rely on the highly inaccurate pop-up timers embedded in many supermarket turkeys. They temp the breast only and inevitable ‘pop’ right about the time the turkey is overcooked.
To temp the breasts, insert the thermometer into the deepest part of each, holding in parallel to the bird at the neck end. The breasts should reach 160º.
To temp the thighs, insert the thermometer between the breasts and drumsticks and into the thickest part of each thigh, steering clear of the bone. The thighs should reach 175º.
