Fettucine Casserole

Ingredients

  • 1/2 lb Italian sausage
  • 1/4 cup onions, chopped
  • 1 16 oz. can whole tomatoes
  • 1 teaspoon oregano
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese
  • 8 ounces fettuccine, cooked
  • 3 eggs, lightly beaten
  • 2 tablespoons margarine
  • 1/4 teaspoon garlic powder
  • 10 ounces frozen chopped spinach, thawed and drained
  • mushroom, sliced

Preparation

Step 1

Brown meat. Add onions until tender. Stir in tomatoes, oregano, spinach and mushrooms. Bring to a boil. Simmer 20 minutes stirring occasionally. Stir in mozzarella. Sprinkle with 1/4 c Parmesan.
Combine 1/4 c Parmesan, eggs, butter and garlic in noodles.
Pour meat mixture in casserole. Then layer mozzarella, noodles, mozzarella. Sprinkle with Parmesan.
Bake 350 uncovered, 25 minutes.
