Ingredients

  • 2 large onions,diced
  • 4 8 oz cans mushrooms with liquid
  • 2 large carrots,cut into chunks
  • 1 Tbs onion soup mix(no MSG)
  • pepper to taste

Preparation

Step 1

Spray a 6 quart pan with some spray and saute onions until golden. Drain mushrooms,reserving liquid. Add mushrooms and carrots to pot and saute for an other 15 min. Add water and reserved liquid to cover the vegetables by about an inch. Season with onion soup mix and pepper.
Cook for another 25-30 minutes until the carrots are soft enough to blend. Blend with a hand blender.
