Perfect Prime Rib
This delicious prime rib recipe is very simple but is perfect every time! We usually savor this dish over the holidays.
Ingredients
- 4 + rib prime rib roast
- 4 - 6 cloves of garlic
- 1/2 jar dijon mustard, or enough to cover the roast
- 1/2 box rock salt, or enough to generously cover the roast

Step 1
Preheat oven to 500 degrees. Cut slits in roast and insert garlic cloves. Cover roast with dijon mustard, then roll in rock salt. Place on a roasting rack in a pan in preheated oven. Cook at 18 minutes per rib (ex.; 4 ribs x 18 minutes = 72 minutes, or one hour and 12 minutes).
Turn off oven and let meat remain in the oven for 2 hours. DO NOT OPEN THE OVEN DOOR DURING THIS TIME!
Allow meat to rest a few minutes before carving, and enjoy!
NOTE: Expect your oven to be messy after cooking. I did loosely "tent" the roast and the results were still incredible but the oven stayed much cleaner!
