Ingredients
- 3 cucumbers, peeled, halved lengthwise, seeded, sliced thin
- 1/2 cup thinly sliced red onion
- 3 TBS cider vinegar
- 1/3 c sour cream
- 1/4 c minced fresh dill
- 1/2 tsp granulated sugar
- Salt and pepper

Preparation
Step 1
1. Spread cute slices in single layer on paper-towel lined baking sheet and refrig for 20 minutes
2. Combine onion and vinegar in bowl and let sit for 20 minutes.
3. Whisk sour cream, dill, sugar and 1/2 tsp salt in large bowl. Add onions and clues and toss to combine. Season with S&P to taste.
VARIATION:
Cuke Salad with Apple, Bacon and Parsley
1. Replace dill with 2 this chopped fresh parsley
2. Add 1 Granny Smith Apple, peeled and grated on large holes of box grater
3. Add 4 strips cooked, crumbled bacon.
