Spice Rubbed Grilled Rib Eye Steak with Creamy Mushroom Sauce

  • Steak Spice Dry Rub
  • For the base
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • For the seasoning
  • 1 tablespoon salt
  • 1 tablespoon ground ancho or other chili pepper
  • For the aromatics
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Steaks
  • 4 ounces rib-eye steak
  • Creamy Mushroom Sauce
  • 4 tablespoons butter
  • 1 pound button mushrooms, rinsed and sliced
  • Salt and pepper to your taste
  • 1 cup of your favourite big red wine
  • 1/2 cup 35% heavy whipping cream

Steak Spice Dry Rub
1.Whisk all three groups of spices together until well blended. Store in a tightly sealed jar.
2.Makes .5-cup
Steaks
1.Preheat your grill over high heat.
2.Place the steaks in a large zipper plastic bag and add a few large spoonfuls of the spice rub. Shake well and work spices onto the surface of the steaks. Place in refrigerator and marinate until ready to grill. An hour or so is ideal.

3.Lightly oil your grill and sear the steaks for about 8 minutes per side, or until they reach the doneness you prefer. To check for doneness you may do what every chef did when they were first learning how to cook: make a small cut and look inside!

Creamy Mushroom Sauce
1.Melt the butter in a saucepan or sauté pan until it foams. Add the mushrooms and season with salt and pepper. Sauté until lightly browned. At first the mushrooms will release quite a bit of moisture but eventually the liquid will evaporate and they will begin to brown. Be patient! Then add the wine, saving some for your glass! Simmer for a few minutes until the liquid reduces by half, and then add the cream. Simmer again, reducing until the sauce thickens. Taste and add a touch more salt and pepper if needed.
