Ingredients
- Spice Rub:
- 3 tb dry mustard
- 1.5 tb light brown sugar
- 2 tb salt
- 2 tsp black pepper
- 2 tsp paprika
- 1/4 tsp cayenne pepper
- Mustard sauce:
- 1/2 cup yellow mustard
- 1/2 c lt brown sugar
- 1/4 c white vinegar
- 2 tb Worcestershire sauce
- 1 tb hot sauce
- 1 tsp salt
- 1 tsp black pepper
- 1 4-5 pound pork shoulder
- 4 cups wood chips soaked for 15 min.

Step 1
take one pork shoulder, boned or with bone, and dry with papper towels. Mix rub ingredients all over roast. You can wrap in plastic and leave in fridge for up to 24 hours. Seal chips in foil
