Ingredients

  • Puff Batter:
  • 3/4 cup shredded crabmeat
  • 1/4 cup shredded cheddar
  • 1 minced green onion
  • 1/2 tsp each dry mustard and Worcestershire sauce
  • 1/8 tsp each salt and pepper
  • 1/4 cup butter or margarine
  • 1/2 cup water
  • 1/2 cup flour
  • 2 eggs

Preparation

Step 1

In bowl, mix together crabmeat, cheese, onion, mustard, Worcestershire sauce, salt and pepper. Set aside.

In saucepan, heat butter and water to boil. Remove from heat.

Add flour and beat until mix does not stick to sides of pan and forms into a ball.

Add eggs, one at a time, beating until each is fully incorporated. Carefully fold in crab cheese mix.

Drop mix by rounded spoonfuls onto greased baking sheet about 1 inch apart.

Bake at 400 for 20 to 25 min or until golden.
