Chocolate Covered Coconut Barsx

Ingredients
- 2 1/2 Cups shredded sweet coconut
- 1/4 cup confectioners sugar
- 2 1/2 Tablespoons unsalted butter, chilled & thinly sliced.
- 1 T. corn syrup
- 12 oz bittersweet chocolate coarsely chopped

Preparation
Step 1
Line a baking sheet with wax paper. Using an electric mixer combine coconut, sugar, butter adn corn syrup. On one of the prepared pans, divide coconut mixture into 15 mounds and shape each into a compact 2 inch long bar. Refridgerate for 10 minutes.
Meanwhile, in a double boiler, melt three quarters of the chocolate, stirring occasionally, until it reaches 110 degrees on candy thermometer--about 3 minutes. Revove the insert and stir the remaining chopped chocolate into the melted chocolate until smooth and cooled at 90 degrees.
Working with one at a time, place coconut bars on a fork and dip into chocolate and dunk to coat. Transfer to a rack set over wax paper. Let it set about 30 minutes.
