Ingredients

  • 2 tablespoon olive oil
  • 1 cup carrot; finely diced
  • 1 cup celery; finely diced
  • 1 cup onion; finely diced
  • 4 clove garlic; minced
  • 4 teaspoon old bay seasoning
  • 5 cup chicken broth
  • 28 ounces crushed tomatoes
  • 2 cup red potatoes; finely diced
  • 16 ounces crab claw meat; packed in water
  • 1 cup parsley; chopped
  • 4 teaspoon lemon juice
  • tabasco; to taste
  • 2 teaspoon sugar

Preparation

Step 1

Heat oil in a pot over medium heat. Add carrots, celery and onion. Saute
six to eight minutes, stirring often, until softened. Stir in garlic and
Old Bay; cook one minute. Add broth, tomatoes, potatoes and crab. Bring to
a boil, then reduce to a simmer and cover with lid. Cook ten minutes, until
potatoes are tender. Stir in parsley, lemon juice, tabasco and sugar.
Serve warm.
