Ingredients

  • 1 - 1 1/2 pound pork tenderloin
  • 2 green onions
  • 1 large red bell pepper
  • salad oil
  • 2 tablespoons curry powder
  • 2 tablespons flour
  • 1/2 teaspoon salt
  • 1 chicken bouillon cube
  • 1 package (10 oz.) frozen peas

Step 1

Cut pork tenderloin crosswise into 1/8" thick slices. Cut green onions into 1" pieces. Cut pepper into 1/4" slices. In 10 inch skillet over medium-high heat, in 2 tablespoons hot salad oil, cook green onions and pepper until browned. With slotted spoon, remove to bowl. In same skillet over high heat in 2 more tablespoons oil, cook pork until it loses its pink color, stirring constantly. Stir in curry and cook 1 minute. In bowl, mix flour with 1 1/2 cups water; stir into skillet with salt, bouillon cube, peas and pepper mixture. Over high heat, bring to boil, then simmer until peas are heated through.
