- Crust:
- 1 c flour
- 1/4 c brown sugar
- 1/2 c butter, room temperature
- Cream Cheese Filling:
- 1-8 oz cream cheese, room temperature
- 1 tsp vanilla
- 1/4 c sugar + 1 tbs, divided
- 1 egg
- 2 small granny smith apple, peeled and diced small
- 1/4 tsp pumpkin pie spice
- Streusel Topping:
- 1/2 c brown sugar
- 1/2 c flour
- 1/4 c old fashioned oats
- 1/4 c butter, room temperature
- 1/4 c caramel sauce

Step 1
Line a 9x9 pan with foil. In med bowl combine crust ingredients, Using pastry cutter or fork, to make coarse crumb. Press mixture firmly in bottom of pan. Bake 12-14 mins. Meanwhile, in mixing bowl. combine cream cheese, vanilla, egg and 1/4 c sugar. Beat until combined and smooth. Set aside. Dice apples and sprinkle with 1 tbs sugar and 1/4 tsp pumpkin spice. Set aside. Make streusel by combining all ingredients, except caramel sauce stir with pastry cutter. When crust is done spread cream cheese mixture over crust, top with diced apples and the streusel. Put back in oven and bake 25-30 mins, until center is set. When done drizzle caramel sauce over top. Let pan cool on wire rack for 30 mins. then place in fridge to chill for 2 hours or overnight. Cut into squares with ready to serve
