Ingredients
- 2 Boneless skinless chicken breast halves
- 2 egg whites
- 2 tsp cornstarch
- 1 tbs lemon juice
- 1 cup coarse bread crumbs - ready to use
- 1/2 cup Parmesan cheese, grated
- 1 tbs fresh chopped sage
- 1 tsp kosher salt
- 1/4 tsp black pepper
- Zest of one lemon
- 3 tbs olive oil

Preparation
Step 1
Preheat oven to 450.
Whisk egg whites, cornstarch and lemon juice in shallow bowl for dipping.
Combine bread crumbs, cheese, sage, salt, pepper and lemon zest.
Dip chicken in mixture then nto crusting mixture. Saute chicken in olive oil in large oven-proof pan. Cook over medium heat until crisp on one side. Turn chicken breast over and transfer pan to oven to finish cooking; approx 8-10 minutes.
