Ingredients
- 2 cups canned black beans, drained and rinsed
- 1 1/2 cups canned shoe peg corn (a variety of white sweet corn), drained and rinsed
- 1 medium red or green pepper, diced
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 cup salsa

Preparation
Step 1
Mix beans, corn and pepper in a bowl. In a separate bowl, mix red wine vinegar, garlic and salsa. Pour salsa into beans and corn. Mix well. Serve with blue corn chips.
