  • 1 8-ounce package dried medium bow tie
  • pasta
  • 1/4 cup finely chopped onion
  • 2 teaspoons cooking oil
  • 2 teaspoon all-purpose flour
  • 1 teaspoon dry mustard
  • 1/3 cup skim milk
  • 1 cup fat-free cottage cheese
  • 2/3 cup shredded reduced-fat cheddar
  • cheese
  • NONSTICK SPRAY COATING
  • 1 tablespoon toasted wheat germ or fine
  • dry bread crumbs
  • chopped tomato (optional)
  • sliced green onion (optional)

Preparation

Step 1

Cook pasta according to package directions,
except omit any oil.

In a large saucepan cook onion in hot oil until tender. stir in the flour and mustard. Add milk all at once. Cook and stir until thickened and bubbly. Stir in the cottage cheese and reduced-fat cheddar cheese. Cook and stir over low heat until cheddar cheese is melted. Stir in the drained pasta.

Spray a 1 1/2-quart casserole with nonstick coating. Spoon pasta mixture into casserole. Bake, covered, in a 350 degree oven for 20 minutes. Uncover and sprinkle with wheat germ or bread crumbs. Bake, uncovered, for 10 to 15 minutes more or until heated through. If desired, garnish with tomato and green onion.
