- 1 cup sliced mushrooms
- 1/2 green bell pepper seeded and chopped
- 1/4 cup salsa
- 1 tablespoon minced cilantro
- 2 fat-free flour tortillas - (6" dia) warmed
Spray a small nonstick skillet with nonstick cooking spray; heat. Add the mushrooms and pepper; cook, stirring as needed, until the vegetables are softened, about 5 minutes.
Add the salsa and cilantro; cook, stirring constantly, until heated through, about 1 minute. Divide the mixture between the 2 tortillas and roll up.
