Cajun Chicken Pasta

Ingredients

  • 8 oz linguine or angel hair pasta
  • 4 boneless, skinless chicken breast halves
  • 4 t Cajun seasoning
  • 4 T butter
  • 2 red bell peppers, sliced
  • 2 green bell peppers, sliced
  • 8 fresh mushrooms, sliced
  • 2 green onions, chopped
  • 2 c heavy cream
  • 1/2 t dried basil
  • 1/2 t lemon pepper
  • 1/2 t salt
  • 1/4 t garlic powder
  • 1/4 t ground black pepper
  • 1/2 c grated Parmesan cheese

Preparation

Step 1

Bring lg pot of lightly salted water to boil. Add pasta & cook 8-10 min until al dente; drain.

Place chicken & Cajun seasoning in plastic bag. Shake to coat. In lg skillet over med heat, sauté chicken in butter until almost tender, 5-7 min. Add red & green bell peppers, mushrooms & green onion. Sauté & stir for 2-3 min. Reduce heat.

Add cream, basil, lemon pepper, salt, garlic powder & ground black pepper. Heat through. Add cooked pasta, toss & heat through. Sprinkle with grated Parmesan cheese & serve.
