Shrimp Fried Rice

Ingredients
- 4 TBS soy sauce divided
- 1 lbs med fresh shrimp peeled
- 5 TBS oil divided
- 2 larege eggs lightly beaten
- 1 C finely chopped carrots
- 1/2 C minced green onions
- 5 C cooked white rice chilled
- 1 C frozen peas thawed
- 2 tsp oyster sauce

Preparation
Step 1
In med bowl combine 2 TBS soy sauce and shrimp tossing gently to coat. Let stand at room temp for 30 mins. In a large skillet or wok heat 1 TBS oil over med high heat. Add eggs cook stirring frequently until eggs are set but moist. Remove from pan and set aside. Add 1 TS oil to skillet and heat over med high heat. Add shrimp and cook stirring frequently for 1-2 min or until shrimp are pink. Remove from pan and set aside. Add remaining 3 TBS oil to skillet and heat over med high heat. Add carrots and green onion cook stirring frequently for 1 min. Add rice and cook stirring frequently for 5-7 mins or until rice is heated through Stir in peas and cook stirring often for 1 min. Stir in remaining 2 TBS soy sauce oyster sauce eggs and shrimp. Serve immediately with egg rolls if desired.
