Ingredients
- 2 Tbs (30 ml) vegetable or olive oil
- 2 medium onions, chopped
- 1 green bell pepper (capsicum) cored, seeded, and chopped
- 1 cup (250 ml) fresh, frozen, or canned corn kernels
- 1 15-oz can (425 g) black beans, drained
- 1/2 cup (125 ml) prepared salsa
- 2 Tbs (30 ml) chile powder
- Cayenne pepper to taste (optional)
- Salt and freshly ground pepper to taste
- 1 lb (450 g) pasta of your choice, cooked according to
- package directions and drained
- 1/4 cup (60 ml) sliced black olives for garnish (optional)

Preparation
Step 1
Heat the oil in a large skillet over moderate heat and saute the
onion and green pepper until tender but not brown, about 5
minutes. Stir in the corn, black beans, salsa, chile powder,
optional cayenne, salt, and pepper and heat through. Toss
with the cooked pasta and serve garnished with black olives
if desired. Serves 4 to 6.
